The Key: Do Not Overcook The Birds

Roast them to medium-rare at most. Best of all, the leftover carcasses and vegetables can be used to make the duck soup recipe created by Hannah’s grandfather, Leigh Perkins, the legendary businessman and sportsman who bought Orvis in 1965.
